It must be made with fresh milk of Iberian origin in the following proportions: maximum of 50% cow's milk, minimum of 15% of goat's milk and minimum of 15% of sheep's milk. It has a minimum maturation period of 90 days. Compact mass with tones from white to ivory. In which you can see characteristics of the three milks. A cheese with a soft and charismatic flavor.
